Typesetting
Composition is the design process of pages, in particular the designing of texts. Composing is a part of the prepress (see there the workflow plan on the far right). Today texts are delivered mostly as Word files and are composed in a publishing program like InDesign. The capabilities of a publishing programs and the working method differ from those of a word processor like Word. If you want quality, then the texts are not composed with a word processor but a publishing program.
Better typography
Fine typesetting by ligatures, oldstyle numbers, small capitals, fractions, black letters with ſ (long s)—as they were state of the art in hot metal typesetting. There is no reason to renounce to that quality in computer typesetting.
